Roasted Salmon Rice

A quick and easy recipe for those in a hurry… but with a filling, delicious taste!

A wok is preferable but if you haven’t one to hand a deep frying pan will do. Cooking time is approx. 10-15 minutes (excluding cooking the rice) and will feed about 4 people.

Ingredients

  1. 400g Rice (cooked)
  2. Red Pepper (chopped)
  3. 1 Onion (chopped)
  4. Pack of Royally Roasted Smoked Salmon (loosely cut)
  5. Soy sauce (optional)
  6. Dash of oil (I sometimes use the oil from the Smoked Mussels to give the dish a smokier flavour)
  7. Salt and Pepper to taste

Method

Heat the wok and add the oil, adding the chopped onions when the pan is hot enough. Fry for a few minutes until they turn golden brown and then lower the heat.

Meanwhile cook the rice however you like until its soft and fluffy – set aside.

Add the cut Royally Roasted Salmon, mix with the onions. Don’t worry if it flakes more.

Add the peppers and mix loosely.

Add the cooked rice, mix everything thoroughly together and lower the heat if not already done so. Cover for a few minutes and then add salt and pepper if needed (also add the soy sauce if desired).

Serve and enjoy!
